Wild rice- green apple salad

Ingredients

Quantity Ingredient
2 cups Wild rice; uncooked
2 cups Chicken broth
4 cups Water
1 teaspoon Salt
2 cups Golden raisins
cup Sherry
1 tablespoon Grated orange rind
½ cup Orange juice
½ cup Commercial Caesar salad dressing
¼ teaspoon Pepper
2 Granny Smith apple; chopped
1 bunch Green onion; sliced
1 cup Sunflower kernels

Directions

Wash wild rice in 3 changes of hot water; drain. Combine wild rice and next 3 ingredients in a saucepan; bring mixture to a boil. Cover, reduce heat, and simmer 50 to 60 minutes or until rice is tender; drain, if necessary, and set mixture aside.

Combine raisins and sherry; set aside. Combine orange rind and next 3 ingredients, set aside.

Combine rice, reserved raisin mixture, apple, green onions and sunflower kernels, Add orange rind mixture; toss gently. Cover and chill at least 8 hours. Stir before serving.
