¾ | cup | Egg Beaters, beaten |
1 | cup | Sugar* |
1 | cup | Brown sugar** |
1 | cup | Liquid Butter Buds or Promise Ultra fatfree margarine |
2 | teaspoons | Vanilla |
2 | cups | Grated zucchini or zucchini and carrots, mixed |
Directions
*Or ½ cup sugar and 6 packets Sweet 'n Low **Or ½ cup brown sugar and 2 teaspoons S&L Brown Preheat oven to 350. Spray two loaf pans with Pam. Sift flour, cinnamon, salt, baking soda and baking powder; set aside. Mix Egg Beaters, sugars, liquid Butter buds and vanilla.
Add sifted dry ingredients and blend in grated zucchini. Pour into loaf pans and bake 60-70 minutes. Per sugar serving: 137 cal., 0.4g fat (3%), 0mg chol., 1g fiber, 3g pro., 31g carb., 137mg sod.
