Zucchini with potatoes

2 Zucchini;
3 Potatoes;
2 teaspoons Oil;
1 Onion; chopped
1 large Tomato; diced
cup Water or chicken broth;
2 teaspoons Oregano; chopped
Salt & pepper;

Directions

Cut unpeeled potatoes and zucchini into ½" pieces. Heat oil in skillet. Add potatoes and stir fry for 1 minute. Pour in water or broth, cover and cook over low heat 4 to 5 minutes. Add onion, zucchini, tomato, oregano and season to taste. Stir and cook until vegetables are tender. Per serving: 140 calories and 2 grams fat.
