¼ | cup | Red pepper, diced |
1 | each | 28 0z Can crushed tomatoes |
2 | eaches | 16 oz cans red beans |
½ | teaspoon | Cajun Spice Mix (McDougall) |
½ | teaspoon | Cilantro |
¾ | teaspoon | Chili Powder |
2 | teaspoons | Salt |
Directions
Grease non-stick stew pot with 2 tsp olive oil. Saute onions, celery and red peppers. Add crushed tomatoes. Add spices. Simmer for 15 minutes. Add RINSED kidney beans. Heat through. Spoon over brown rice.
