Apricot meat loaf

Ingredients

1 | teaspoon | Vegetable oil |
1 | small | Onion, chopped |
¾ | teaspoon | Ground cumin AND coriander |
½ | teaspoon | Cinnamon |
½ | teaspoon | Salt and pepper (each) |
1 | each | Egg |
1 | teaspoon | Grated orange rind |
¼ | cup | Orange juice |
¼ | cup | Fresh bread crumbs |
2 | tablespoons | Diced dried apricots |
1 | pounds | Lean ground beef |
1 | tablespoon | Slivered almonds |
Directions
Saute the onions until softened. Set aside. Mix together the egg, orange rind and juice. Add the cooled onions and spices. Stir in the meat, bread crumbs and apricots. Mix together until blended and shape into a loaf form in shallow pan. (or use loaf pans) Sprinkle almonds on top and bake in a 350F oven for about 60-75 minutes or until no longer pink inside.
