Herbed pork and apricot loaf

Ingredients

500 grams Minced pork
1 small Onion; finely chopped
1 pack MAGGI Apricot Sauce Mix
¼ cup Dried apricots; chopped
¼ cup Chopped parsley
1 Egg
1 teaspoon Dried thyme or 2 teaspoons fresh thyme
; leaves
1 teaspoon Ground nutmeg
Freshly ground black pepper
3 Bacon rashers; cut into strips (3

Directions

Combine all the ingredients, except the bacon, in a bowl.

Mix thoroughly.

Pack into a medium, greased loaf tin.

Place the bacon strips over the top of the loaf.

Cook in a preheated oven, 180 C, for 50-60 minutes or until cooked.

Turn the loaf out and serve hot or cold.
