Baby beets with caraway

Ingredients

1 pounds Baby beets, trimmed, leaving 1\" of stem and rinsed
1 teaspoon Horseradish
1 tablespoon Caraway seeds
cup Lowfat blend

Directions

Place the beets in a medium sized saucepan; cover with water and bring to a boil. Reduce the heat and simmer until the bets are tender, 20-25 minutes. Rinse the beets under cold water, drain, and slip off the skins. Place the whole beets in a medium size bowl. Add the horseradish, caraway seeds, and lowfat blend; mix thoroughly.

Cover and refrigerate for 1-4 hours.

Per serving: 75 calories, 12g carb., 4g protein, 1mg chol., 2g/19% fat.
