Baked leeks with bacon and gruyre

Ingredients

1 | ounce | Bacon, cut in small dice |
1 | large | Egg |
¼ | cup | Milk |
¼ | cup | Chicken stock or broth |
Salt and white pepper | ||
1 | ounce | Gruyre cheese, grated (about 1/3 cup) |
1 | Recipe Steamed Leeks | |
1 | tablespoon | Dry bread crumbs |
1 | tablespoon | Parsley, minced |
Directions
1. Adjust oven rack to center position and heat oven to 350øF. Fry bacon in small skillet over medium-high heat until fat is rendered and bacon is crisp, 3-5 minutes. Drain fat; set bacon aside to cool.
2. Whisk egg, milk, chicken stock, and salt and pepper to taste in a small bowl. Stir in cheese.
3. Arrange leeks in single layer in baking dish. Pour egg mixture over leeks; sprinkle with bacon bits and bread crumbs. Bake until top is browned and egg mixture is set, about 30 minutes. Sprinkle with parsley and serve.
