Ingredients

Quantity Ingredient
1 Egg
cup Sour cream
½ cup Honey
1 teaspoon Vanilla extract
cup Ripe or overripe bananas, mashed
1 cup Chopped nuts
cup Flour
teaspoon Baking powder
1 teaspoon Baking soda
1 teaspoon Salt
½ teaspoon Cinnamon

Directions

In a large bowl, beat the egg until lightly colored. Add sour cream; honey and vanilla. Beat again. Mash bananas with potato masher or a fork; add to the egg mixture. Add nuts. Sift together remaining dry ingredients. Combine with banana mixture and blend lightly.

Pour batter into a greased 8 1/2x4½" loaf pan. Bake at 350'F.

about 1 hour, until bread is browned. Cool before slicing.
