Basic wild rice

Directions
OPTIONAL FLAVORINGS
1. Wash the rice in a strainer or colander. Place the rice, water, salt and pepper in a large heavy pot and bring to a rapid boil. If using optional flavorings, pin the bay leaf to the onion with a clove; add the onion and garlic to the rice.
2. Cover the pot, reduce the heat to medium, and simmer for 30 minutes.
3. Remove the pan from the heat and let the rice sit for 30 minutes, or until softened to the desired consistency. Drain off any excess water in a colander. Discard the spices and vegetables and season the rice with salt and pepper to taste.
makes 3«-4 cups, enough to serve 4-6.
