Simple wild rice

2 cups Wild rice
6 cups Boiling water
1 tablespoon Olive oil
Salt

Directions

TO PREPARE THE WILD RICE, wash it in a sieve under cold running water for 2 minutes. Put the rice in a heavy pan, add the boiling water, and the olive oil. Cover, and let the rice simmer about 55 minutes until it is cracked and puffy. Drain, and salt to taste. (Be sure to drain rice after soaking.) NATHALIE DUPREE PRODIGY GUEST CHEFS COOKBOOK
