Batter-fried vegetables

Ingredients

1 | Egg, slightly beaten | |
1 | cup | Ice water, cold milk or beer |
1 | cup | Flour |
5 | cups | Veggies to bread. |
Shortening or oil to fry in | ||
Dipping Sauce |
Directions
For batter, in medium mixing bowl stir together egg and ice water, milk or beer. Add flour all at once. Beat with a rotary mixer or whisk until mixture is smooth. Set aside.
Rinse vegetables under cold water, drain. Pat dry with paper towels.
Set aside.
In a heavy saucepan or deep fryer heat 2 inches of melted shortening or oil to 375 degrees F. Dip veggies a few at a time into the batter, swirling to coat. Fry for 2 to 3 minutes or until light golden brown. Drain vegetables on paper towels. Keep warm in a 300 degree F oven. Repeat with remaining vegetables.
Serve with individual bowls of Dipping Sauce. Makes 8 servings.
