1 pack Red beans, 12 oz
1 slice Salt pork
¼ pounds Ham. diced
1 tablespoon Bacon drippings
1 tablespoon Flour
½ Green pepper, chopped
1 Onion, diced
2 Garlic cloves, crushed
Salt
Pepper

Pick over beans and soak overnight. Cook in water adding more as needed. When cooking begins, add salt pork. After about 45 minutes add ham, In a small sauce pan, saute onions, pepper and garlic in bacon dripings. Add flour and blend. Add to beans and simmer ½ hour more until beans are tender. Serve over rice.
