Beef and tomato stir fry

Ingredients

Quantity Ingredient
1 pounds Beef, cut into strips
3 tablespoons Cornstarch
3 tablespoons Soy sauce
1 large Onion, sliced and chopped
1 Clv garlic, chopped
2 Tomatoes, cut into wedges
1 Green pepper, sliced
½ pounds Mushrooms, sliced
1 cup Beef broth
1 cup Uncooked rice

Directions

Mix beef strips with cornstarch and soy sauce. Let stand 15 minuts.

In the meantime, start rice. Slice vegetables. Heat vegetable oil in a wok or large skillet. Add meat and stir fry until browned.

Remove meat. Add chopped onions, garlic and peppers to the skillet.

Stir fry for about 2 minutes. Add tomatoes and mushrooms and stir fry for another minute or 2. Return meat to pan, add beef broth.

Cook gently for 5 minutes. To serve, top fluffy rice with the beef mixture.
