Black eyed pea stew

Ingredients

1 | cup | Black eyed peas, cooked |
1 | each | Onion, sliced |
2 | eaches | Tomatoes, chopped |
½ | each | Chili, chopped |
1 | tablespoon | Palm oil* |
Salt & pepper |
Directions
Mash the cooked beans & set aside. Heat the oil in a pan & cook the onion & tomatoes a little before adding the mashed beans, chili & the rest of the seasonings.
Let the mixture cook for 10 minutes or so until it combines well.
Stir from time to time & add a little water if it becomes too dry.
Serve hot with mashed yams, fried plantains or rice.
*Use vegetable oil in place of palm oil Troth Wells, "The World in Your Kitchen"
