Blueberry oat mufflns

Ingredients

1 cup Quick-cooking oats
1 cup Milk -- sour
1 cup All-purpose flour
¾ cup Packed brown sugar
1 teaspoon Baking powder
½ teaspoon Baking soda
½ teaspoon Salt
1 each Egg -- beaten
¼ cup Butter or margarine --
Melted
1 cup Fresh blueberries

Directions

In a bowl, combine oats and milk: let stand a few minutes. In another bowl, combine flour, brown sugar, baking powder, baking soda and salt; mix well. Stir egg and butter into oat mixture. Add oat mixture all at once to dry ingredients. Stir just until moistened. Gently fold in blue-berries. Fill well-greased muffin tins ¾ full. Bake at 400 deg. for 15-20 minutes. Yield: 12 muffins. (*To sour milk, place 1 tablespoon white vinegar in a mesureing cup; add enough milk to equal 1 cup.)
