Bombay rice pilaf

Ingredients

2½ | cup | Water |
2 | packs | Instant chicken-flavored broth mix |
1 | tablespoon | Lemon juice; fresh, not bottled |
1 | tablespoon | Margarine |
1 | small | Bay leaf |
¼ | cup | Plus |
2 | tablespoons | Golden raisins (Sultanas) |
6 | ounces | Uncooked brown rice |
Directions
Combine all ingredients EXCEPT RICE in a 3 quart saucepan. Bring to a boil over med-high heat. Stir in rice; reduce heat to low, cover & simmer until all liquid is absorbed, 50-60 minutes. (Check after 45-50 minutes; add boiling water if rice seems too dry). Remove & discard bay leaf before serving.
