Braised pearl barley with basil pesto

Ingredients

1 | large | Yellow onion(s) |

1 | medium | Bay leaf |
3½ | cup | Chicken stock |
¼ | teaspoon | Salt |
½ | teaspoon | Pepper |
2 | tablespoons | Basil pesto |
(purchased or homemade) |
Directions
Place the barley in a fine sieve and wash under cold running water until the water runs clean, about 5 min. Drain.
In a heavy saucepan, combine the barley, onion, bay leaf, chicken stock, salt and pepper. Bring to a boil, reduce the heat, cover, and simmer for 30 min. Remove from the heat and let stand for 5 min uncovered. Fold in 2 tb of basil pesto and mix well, fluffing with a fork,
