2 | cups | Unsifted all-purpose flour |
1 | tablespoon | Baking powder |
1 | teaspoon | Sugar |
½ | teaspoon | Salt |
1 | cup | Milk |
¼ | cup | (1/2 stick) butter, melted |
1 | Large egg | |
1 | cup | Coarsely shredded Cheddar cheese |
2 | teaspoons | Chopped fresh chives |
Directions
1. Heat oven to 400'F. Grease twenty-four 1½-inch muffin-pan cups.
In large bowl, combine flour, baking powder, sugar, and salt.
2. In small bowl, with wire whisk, combine milk, butter, and egg.
3. Stir milk mixture into flour mixture just until flour is moistened.
(Batter will be lumpy.) Fold in cheese and chives. Using small spoon, divide batter among greased muffin-pan cups.
4. Bake 10 to 12 minutes or until centers spring back when lightly pressed with fingertip. Cool muffins in pan on wire rack 5 minutes.
Remove muffins from pan and serve warm.
