Buttermilk spice muffins

Ingredients

Quantity Ingredient
cup All-purpose flour
2 teaspoons Baking powder
½ teaspoon Baking soda
½ teaspoon Ground cinnamon
¼ teaspoon Ground nutmeg
¼ teaspoon Salt
1 cup Buttermilk
2 larges Eggs
½ cup Sugar
½ Stick unsalted butter or margarine (not spread), melted and cooled
1 teaspoon Vanila
1 tablespoon Sugar, topping

Directions

Heat oven to 375°. Spreay 12 regular-size muffin cups with nonstick cooking spray or place 12 foil cupcakes liners on a cookie sheet.

In a 2-3 quart bowl, stir flour, baking powder, baking soda, spices and salt until blended. Pour over flour mixture and stir just until mixed.

Spoon into muffin cups or foil cupcake liners. Sprinkle with the 1 tbsp sugar. Bake 25-30 minutes or until tops are lightly browned and muffins are springy to the touch. Cool in pan 5 minutes before turning out onto wire rack. Serve warm or room temperature.
