Carrot/raisin salad

Ingredients

Quantity Ingredient
8 Carrots, peeled (up to 10)
1 cup Raisins, or more to taste
½ cup Orange juice
Splash of balsamic vinegar, or more to taste
1 can Cubed pineapple, with some juice
½ cup Shredded apple (optional) (up to 3/4)

Directions

Using food processor if handy, grate carrots. Mix with all other ingredients, including food processed apple if desired, and chill. Very refreshing and healthy. I have seen this made with fat-free mayo but not really necessary since the orange juice/vinegar acts as a great dressing.
