Chicken and cortland apple couscous

Ingredients

Quantity Ingredient
2 cups Coarsely chopped cooked chicken
2 cups Dry couscous
cup Boiling chicken stock
½ cup Golden raisins
½ cup Toasted slivered almonds
2 Cortland apples, peeled, cored and coarsely chopped
¼ cup Unsalted butter, but into small pieces
½ teaspoon Ground coriander seeds
¼ teaspoon Ground cinnamon
teaspoon Ground cloves

Directions

Preheat oven to 400F. Combine all ingredients in a 9x13x2 inch glass baking pan. Cover with foil and bake for 25 minutes.

Serves 4.
