Ingredients

1 | (5-6 pound) chicken; cut up | |
6 | cups | Hot water |
1 | medium | Onion; sliced |
1 | tablespoon | Salt |
½ | teaspoon | Pepper |
2 | teaspoons | Ground allspice |
3 | cups | Sliced celery |
1 | cup | Uncooked regular rice |
Finely minced giblets |
Directions
Heat water in a heavy kettle. Add seasonings, onion, and chicken. Cover, simmer for about 2 to 2-½ hours or until just tender. Add celery, rice, and giblets. Cover and cook for 20 minutes or until rice is tender. Thicken if desired. Yield: 6 servings.
