Chicken upside down

Ingredients

⅔ | cup | Butter or margarine |
⅔ | cup | All-purpose flour |
3 | cups | Chicken broth |
2 | cups | Milk |
1 | teaspoon | Salt |
½ | teaspoon | Pepper |
2 | Tbps lemon juice | |
2½ | cup | Cooked chicken; cut into 1/2 inch cubes |
1 | Egg | |
⅔ | cup | Milk |
3 | tablespoons | Vegetable oil |
1 | cup | Self-rising cornmeal |
1 | teaspoon | Sugar |
Directions
Melt butter in a saucepan over medium heat. Add flour, stirring constantly.
Gradually add chicken broth and milk cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt, pepper, lemon juice, and chicken. Pour mixture into greased 13x9 inch baking dish. Combine egg and remining ingredients, stirring well; pour over chicken. Bake at 350 for 50-60 minutes or until golden brown. Makes 6-8 servings** Sometimes I add vegetables also. It's great with a green salad and homemade bread.
