Citrus ginger chicken

Ingredients

Quantity Ingredient
¼ cup Low-sugar orange marmalade
1 tablespoon Prepared mustard
¾ teaspoon Ground ginger
teaspoon Ground red pepper
4 eaches (6-oz. ea.) Skinned chicken breast halves
x Vegetable cooking spray
3 tablespoons Reduced-calorie margarine, softened
½ teaspoon Grated orange rind
¼ teaspoon Ground ginger
x Orange rind curls (optional)

Directions

Combine first 4 ingredients in a small bowl, stirring well with a wire whisk. Brush half of marmalade mixture evenly over chicken breast halves. Coat grill rack with cooking spray; place rack on grill over medium-hot coals. Place chicken on rack, and cook 10 minutes on each side or until chicken is done, brushing frequently with remaining marmalade mixture.

Combine margarine, orange rind, and ginger in a small bowl, stirring to blend. Spoon 1 tablespoon margarine mixture over each chicken breast half. Garnish with orange rind curls, if desired.
