Coco loco crustless pie

3 | Eggs or 3/4 cup thawed no-cholesterol substitute | |
1½ | cup | Skim milk |
1 | teaspoon | Vanilla |
6 | tablespoons | Biscuit mix |
3 | tablespoons | Sugar |
9 | tablespoons | Dried coconut flakes |
No-calorie sweetener to taste; optional |
Directions
Combine ingredients, except coconut and no-calorie sweetner in blender or food processor (using steel blade). Cover; blend smooth. Pour into 8-inch round or square nonstick cake pan which has been sprayed with cooking spray. Sprinkle the surface evenly with coconut. Bake in preheated 350 oven 35 to 40 minutes, until pie is set and topping is golden. Cut in wedges or squares to serve, warm or chilled. Sprinkle top lightly with no-calorie sweetener before serving if desired.
