½ cup Chopped onion
1 tablespoon Margarine
2 Ears corn, cut into quarters
2 mediums Zucchini (1/2 lb)
2 smalls Tomatoes, cut in wedges

Directions

For ease in cutting ears or corn, make a ¼-½" cut every 2" along length of ear. Use both hands to break off each quarter beginning with the base end and work toward the tip end of the ear. Serve a corn holder for each person to hold the hot mini ear of corn for easier eating.

Combine onion and margarine in a 2-quart casserole. Cover with lid or vented plastic wrap and microwave on high 3-3½ minutes. Stir in corn pieces, re-cover and microwave on high 3 minutes. Stir in zucchini; re-cover and microwave on high 3 minutes. Add tomatoes; re-cover and let stand 3-4 minutes.
