Cool lemon chicken salad~

Ingredients

Quantity Ingredient
½ cup Miracle Whip
2 tablespoons Fresh basil -- chopped OR
2 teaspoons Dried basil
1 tablespoon Lemon juice
1 teaspoon Grated lemon rind
2 cups Chopped, cooked chicken &/or
Turkey
1 cup Halved red or green grapes
½ cup Halved chinese pea pods *
½ cup Thin sliced red onion **
Lettuce leaves - chopped or
Torn -- optional

Directions

* remove "strings", blanch and cut to bite-sized pieces. ** regular onion or green onion - including tops can be used.

Mix Miracle Whip, basil, lemon juice and peel. Add remaining ingredients, except lettuce. Mix lightly and refrigerate. Serve on lettuce, if desired.

Serves 4 but recipe doubles well.

Per serving: Calories 334; fat 20½ g; cholesterol 74 mg; carbohydrate 16⅒ g; fiber 1⅗ g; protein 22⅒ gl sodium 235 mg; potassium 358 mg.

Note: Can add any salad "fixing" (tomatoes, bean sprouts, etc.; black olives work okay but alter the taste of the whole salad) at serving time.
