Creamed onions

¼ | cup | Plus 1 Tbsp. butter, melted |
3 | tablespoons | Self-rising flour |
1½ | cup | Milk |
½ | teaspoon | Salt |
¼ | teaspoon | Pepper |
1 | cup | (4 oz.) shredded Cheddar cheese |

Directions
Saute' onion in butter in a medium saucepan over medium-high heat until tender. Reduce heat to medium; sprinkle flour over onion and stir until smooth. Cook 1 minute, stirring constantly. Gradually add milk, stirring until smooth; stir in salt and pepper. Cook, stirring constantly, until thickened. Stir in cheese until melted, if desired. Pour into a serving bowl. Serve with roast, meatloaf, or hamburger steaks and biscuits or grits, of course.
