Crostini all'aglio mozzarella

Ingredients

12 | slices | Italian bread; thick |
3 | Cloves garlic; finely crushed | |
2 | cups | Diced whole-milk Mozzarella (about 1 lb.=2 cups) |
1 | cup | Good quality Italian olive oil |
½ | cup | Unsalted butter; room temp. |
½ | cup | Chopped fresh basil leaves |
2 | teaspoons | Tomato paste |
Salt and pepper |
Directions
1. Preheat oven to 425 F. Lay the bread slices on large baking sheets.
2. Place the garlic in a deep bowl and add the cheese, olive oil, butter, basil, tomato paste, and the salt and pepper to taste.
3. Mix well together, then spread over each slice of bread. Place the bread slices in the hot oven and bake until the cheese melts. Serve at once.
