Crusty horseradish chicken

Ingredients

1 pounds Boned and skinned chicken breast halves
¾ cup Breadcrumbs, wholewheat
¼ teaspoon Salt
¼ teaspoon Freshly ground pepper
2 tablespoons Prepared horseradish
1 tablespoon Dijon mustard
¼ cup White wine

Directions

Preheat oven to 350 degrees. Cut meat into 4 portions. On a plate mix together the bread crumbx, salt and pepper. In a bowl stir together the horseradish, mustard and wine. Dip chicken in the horseradish mixture until well coated. You can marinade for up to 1 hour for a stronger flavor. Roll the chicken in the breadcrumbs to coat evenly.

Place pieces in a casserole (not glass). Don't let the pieces touch.

Bake uncovered for 25-30 mins. until firm to the touch. Posted to MC-Recipe Digest V1 #
