3 | Plum tomatoes | |
1 | tablespoon | Indian-style curry paste |
½ | cup | Cashews |
2 | tablespoons | Cilantro, chopped |
Fresh ground pepper |
Directions
1. In a covered saucepan, bring 1 cup of water to a rolling boil over high heat. Add the couscous and ½ tsp salt, stir well and remove from the heat. Cover and let stand for at least 5 min.
2. Meanwhile, chop the tomatoes.
3. Fluff the cooked couscous with a fork. Add the tomatoes and curry paste and toss. Add the cashews, cilantro, and salt and pepper to taste; toss well and serve.
