Ingredients

Quantity Ingredient
5 pounds Broiler-fryers chicken
3 cups Pineapple chunks; fresh,
Canned or frozen
2 tablespoons Ginger root, grated -OR-
1 teaspoon Ground ginger
1 cup Pineapple juice
1 cup Soy sauce
2 Cloves garlic, minced
3 tablespoons Oil

Directions

Clean and cut the fryers. Combine all the above ingredients (with exception of oil) for a marinade. Cover chicken and let stand at least 4 hours. Turn often. Drain. Brown chicken in oil in a heavy skillet. Place meat in a greased casserole. Bake in 325 oven for an hour, or until tender.
