Deluxe german potatoe salad

Ingredients

½ pounds Sliced bacon
1 cup Celery -- thinly sliced
1 cup Onion -- chopped
1 cup Sugar
2 tablespoons All-purpose flour
1 cup Vinegar
½ cup Water
1 teaspoon Salt
¾ teaspoon Dry mustard
5 pounds Red new potatoes -- unpeeled
Cooked/slic
2 eaches Carrots -- shredded
2 tablespoons Fresh parsley -- chopped
Additional salt to taste

Directions

In a skillet, cook bacon until crisp. Drain, reserving ¼ cup drippings. Crumble bacon and set aside. Saute the celely and onion in drippings until tender. Combine sugar and flour; add to skillet with vinegar, water, salt and mustard. Cook, stirring constantly, until mixture thickens and bubbles. In a large bowl, combine potatoes, carrots and parsley; pour the sauce over and stir gently to coat.

Season to taste with additional salt. Spoon into a serving dish; garnish with crumbled bacon. Serve warm. Yield: 14-16 servings Recipe By : Taste of Home
