German country potato salad

Ingredients

Quantity Ingredient
1 pounds Potatoes
4 Hard boiled eggs
1 small Cucumber
3 ounces Bacon; diced
4 tablespoons Mayonnaise
2 Onions; finely chopped
3 teaspoons Parsley flakes
2 teaspoons Snipped chives
Oil
Vinegar

Directions

Boil potatoes, peel & slice in cubes. Fry bacon until crisp. Slice eggs & cucumber & mix together with oil & vinegar to taste. Salt & pepper. Serve cool.
