Double apple corn muffins

Ingredients

Quantity Ingredient
1 cup All-Purpose Flour
1 cup Yellow Cornmeal
¼ cup Sugar
1 Tbls Baking Powder
½ teaspoon Salt
2 Slightly Beaten Eggs
cup Applesauce
½ cup Milk
¼ cup Oil
1 large Apple, Peeled And Finely Chopped

Directions

Stir together four, cornmeal, sugar, baking powder and salt and set aside.

Combine eggs, applesauce, milk and oil; stir into dry ingredients just until moistened. Add apple. Spoon into greased muffin pans filling ⅔ full. Bake in 425F oven 15 to 20 minutes.
