1 | large | Eggplant; peeled, diced, boiled and drained |
1 | Egg | |
1 | pinch | Baking soda |
Salt and pepper | ||
Flour | ||
Oil for frying |
Directions
Add egg to eggplant; add soda, salt and pepper. Add enough flour to make a thick batter. Drop by tablespoon into hot oil. Brown on both sides and drain.
