Ingredients

Quantity Ingredient
1 large Eggplant; peeled, diced, boiled and drained
1 Egg
1 pinch Baking soda
Salt and pepper
Flour
Oil for frying

Directions

Add egg to eggplant; add soda, salt and pepper. Add enough flour to make a thick batter. Drop by tablespoon into hot oil. Brown on both sides and drain.
