Elanor's sweet potato pie

Ingredients

cup Sweet potatoes, cook/mash
½ cup Butter, softened
2 cups Sugar
4 eaches Eggs
½ teaspoon Salt
½ teaspoon Nutmeg
13 ounces Evaporated Milk
2 teaspoons Lemon extract
2 eaches Deep dish unbaked pie shells

Directions

beating well. After each one, stir in salt, nutmeg, milk and extract. Pour into 2 deep dish unbaked, pie shells. Bake at 425 for 20 minutes. Then lower oven to 325 and bake for 30-40 minutes longer.
