Fat rascals (potato cheese puffs)

Ingredients

Quantity Ingredient
1 cup Mashed potatoes
2 eaches Eggs -- beaten
½ cup Milk
2 cups American cheese -- 8 oz
Or cheddar cheese
½ cup Flour
¼ teaspoon Baking powder
1 dash Salt
1 dash Pepper
Salad oil for frying

Directions

Combine ingredients except oil; mix well. 'Pour about 2 inch of salad oil into a saucepan or frying pan and heat to 375 deg. Drop batter by tablespoons, 4 or 5 at a time, into the hot oil. Fry 3-4 min. or until golden brown. Serve immediately. Yield: about 24 puffs.
