Festive fruit and nut cake

Ingredients

Quantity Ingredient
cup Dried apricots, quartered
cup Red and green candied cherries, halved
¾ cup Raisins
½ cup Pitted prunes
cup Brazil or macadamia nuts
1 cup Walnuts or pecans
1 cup Almonds, finely chopped
½ teaspoon Baking powder
3 Eggs
2 tablespoons Honey
2 teaspoons Vanilla extract

Directions

Preheat the oven to 300øF. Grease two 7x3 inch loaf pans and line with wax paper. Combine the fruit, nuts and baking powder. Beat the eggs until thick and creamy. Beat in the honey and vanilla. Pour the egg mixture into the fruit mixture and combine thoroughly. Spoon into the pans. Bake for 1½ hours. Allow to cool completely in the pans. Makes 2 loaves.
