Fiesta scrambler

Ingredients

2½ | cup | Lite silken tofu; (firm or xtra firm) this is one package of Mori-Nu |
1½ | teaspoon | Olive oil |
⅛ | teaspoon | Crushed red pepper |
3 | Scallions; chopped, I used yellow onions | |
3 | Cloves garlic; minced | |
⅓ | cup | Green bell pepper; chopped |
¼ | teaspoon | Turmeric |
1 | tablespoon | Tamari soy sauce |
¾ | cup | Chunky salsa; mild or hot, I used pace medium |
3 | tablespoons | Tequila; to 4 tbsp |
1 | tablespoon | Lime juice |
¼ | cup | Fresh cilantro; chopped |
Directions
Drain tofu, and mash with a potato masher. Microwave on high for 2½ minutes. Place in a fine mesh strainer.
Heat the olive oil and red pepper flakes. Add the onions, garlic, and bell pepper. Saute for about 3 minutes, or until crisp tender. Add the drained tofu, and continue to cook for 5 minutes, stirring frequently. Stir in remaining ingredients. Reduce heat, and simmer 5 more minutes or until ready to serve.
Serve with warm whole wheat tortillas and extra salsa.
