Fiesta scrambler

Ingredients

Quantity Ingredient
cup Lite silken tofu; (firm or xtra firm) this is one package of Mori-Nu
teaspoon Olive oil
teaspoon Crushed red pepper
3 Scallions; chopped, I used yellow onions
3 Cloves garlic; minced
cup Green bell pepper; chopped
¼ teaspoon Turmeric
1 tablespoon Tamari soy sauce
¾ cup Chunky salsa; mild or hot, I used pace medium
3 tablespoons Tequila; to 4 tbsp
1 tablespoon Lime juice
¼ cup Fresh cilantro; chopped

Directions

Drain tofu, and mash with a potato masher. Microwave on high for 2½ minutes. Place in a fine mesh strainer.

Heat the olive oil and red pepper flakes. Add the onions, garlic, and bell pepper. Saute for about 3 minutes, or until crisp tender. Add the drained tofu, and continue to cook for 5 minutes, stirring frequently. Stir in remaining ingredients. Reduce heat, and simmer 5 more minutes or until ready to serve.

Serve with warm whole wheat tortillas and extra salsa.
