Figs with ricotta

15 Figs
1 cup Ricotta cheese
2 tablespoons Ground almonds
1 teaspoon Grated lemon rind
1 teaspoon Grated orange rind
1 teaspoon Vanilla extract
1 teaspoon Almond extract
¼ cup Honey
Chopped toasted pistachios

Directions

Remove stems from figs. Cut almost in half, open up to stuff. In food processor mix together ricotta, ground almonds, lemon & orange rind, vanilla & almond extract & honey. Process to blend. Stuff each fig with flavored ricotta. Garnish with toasted nuts.

Approximately 4-6 minutes.
