Fish in pastry with herb sauce

1 | Egg; beaten with 1 Tbls. | |

Directions
Roll out 1 pastry sheet to 12 inch square. Cut into 4 equal squares. Place fish fillet on each square. Season with salt and pepper. Bring pastry corners up around fish. (Use remaining pastry sheet if needed to enclose fish.) Pinch pastry together and seal edges with egg mixture. Arrange fish packages seam side down, on buttered baking pan. Brush with egg mixture.
Cover and chill 30 minutes or up to 8 hours. Bake at 400 degrees until pastry is golden and fish is done. Serve with Herb Sauce.
