Flour 'schmarren'

Ingredients

9 | ounces | Plain flour (up to) |
5 | Eggs; separated | |
1 | pinch | Salt |
1 | tablespoon | (heaping) sugar |
¾ | pint | Milk plus |
5 | tablespoons | Milk |
2¼ | ounce | Butter or margarine |
Sugar for sprinkling | ||
Applesauce for topping |
Directions
Sift flour into a bowl & make a well in the middle. Beat egg yolks with a little of the milk, salt & tablespoon of sugar & pour into the well.
Starting from the middle, blend the yolk mixture & the flour. Gradually add milk, taking care to avoid lumps. Whisk egg whites until stiff; carefully fold into flour mixture. Heat butter in frying pan & pour in about ⅜ inch of the batter. Fry until underside is light yellow. Tear into small pieces with two forks. Brown the pieces well, turning frequently. Repeat until the batter is used up. Serve sprinkled with sugar and applesauce.
