French (green) beans in hollandaise sauce (mw)

Ingredients

pounds French (Green) beans
cup Butter
5 eaches Egg yolks
Salt and pepper
Grated lemon zest
Juice of one lemon
Tabasco sauce
½ teaspoon Dried basil

Directions

Top and tail the beans and put in a dish with ½ cup water. Cover and microwave on HIGH for 8 minutes. Leave to stand for 5 minutes.

Melt the butter in a bowl in the microwave for 2 minutes on high.

Whisk together the egg yolks, salt and pepper, a few drops of lemon juice and 1 teaspoon water in a Pyrex bowl. Gradually whisk in a little of the foaming butter. Heat on high for 1 minute, remove and whisk again, gradually adding the remaining butter. Return to the microwave for 1 minute on high. Whisk again.

Add the remaining lemon juice and zest (peel) and a drop of Tabasco sauce. Whisk well, and if the sauce has not thickened enough, return the bowl to the microwave for 30 seconds.

Drain the beans, sprinkle with basil, and return to the microwave.

Cook on high for 3 minutes. Stir and serve with the sauce poured over.

Microwave Hint: To cook green beans, trim the ends, cut long beans is half and put in a suitable dish. Sprinkle with salt to taste and add ¼ cup water. Cover and cook on high for 3 minutes. Test for tenderness, re-cover and cook for a further 2 to 3 minutes. Leave to stand, covered, for a further 2 minutes before serving. Sprinkle with chopped savory.
