Fresh apple nut cake with caramel icing

Ingredients

Quantity Ingredient
3 cups Sifted flour
1 teaspoon Baking powder
1 teaspoon Salt
1 teaspoon Baking soda
1 teaspoon Cinnamon
¾ cup Oil
4 cups Apples, finely chopped
(about 6)
1 teaspoon Vanilla
2 Eggs
2 cups Sugar
1 cup Pecans, finely chopped
Caramel Icing:
cup Sugar
¾ cup Milk
1 Egg
½ cup Sugar
½ Stick butter
1 teaspoon Vanilla

Directions

Preheat oven to 350 degrees. In a lg mixing bowl, sift flour, baking powder, soda, salt, & cinnamon. Add oil, apples & vanilla. Beat at md speed for 2 min. until well blended. In another bowl, beat eggs until light yellow in color. Gradually add sugar & continue beating until light & fluffy. Fold egg mixture into the apple mixture, blending thoroughly. Stir in nuts. Pour into lightly greased 10" tube pan. Bake at 350 degrees for 1 hr. & 10 min. or until done.

Caramel Icing:

MIx 2 c sugar, milk & egg & bring to a boil. Brown ½ c sugar in skillet, then add it to egg mixture while boiling. Boil until cool, then add a little butter & vanilla. Cool & spread over cake. From: Mark Barnett Date: 04 Feb 94
