Fresh peach bran muffins

Ingredients

Quantity Ingredient
1 cup Oat bran
« cup all purpose flour
¬ cup whole wheat flour
¬ cup sugar
2 teaspoons Baking powder
« tsp. baking soda
1 each « tsp. grated orange zest
« tsp. nutmeg
« tps. mace
¬ tsp. salt
1 cup Non-fat peach yogurt
¬ cup safflower oil
1 each Egg
2 mediums Peaches, peeled and cut into «\" dice
1 each Heat oven to 400F. Line a 12 count muffin tin with paper baking cups.
2 eaches In a large bowl, combine the oat bran, flours, sugar, baking powder,
Baking soda, orange zest, nutmeg, mace and salt.
3 eaches In another bowl, place the yogurt, oil and egg. Whisk until well

blended. Stir in the peaches. Add all at once to the dry ingredients.

Stir only until moistened;the batter should be slighlty lumpy. 4.
