Peachy muffins

Ingredients

Quantity Ingredient
1 cup Wheat bran cereal
1 cup Orange or apple juice juice
1 teaspoon Baking soda
1 cup Nonfat buttermilk
1 cup Quick oats (uncooked)
1 cup Dried peaches, chopped
1 cup Raisins
½ cup Whole wheat flour
½ cup All-purpose flour
cup Sweet 'n Low (4 packets)
½ teaspoon Salt (opt)
Vegetable spray

Directions

Combine cerel and juice in bowl. Dissolve baking soda in buttermilk, mix.

Add buttermilk, oats, and remaining ingredients to cereal and stir until well moistened. Coat muffin pans with cooking spray, filling ⅔ full.

Preheat oven to 375 degrees and bake for 20 minutes.

Yield: 18-20 muffins, approximately 120 calories each.
