Directions
ABOUT 4 HOURS BEFORE SERVING OR EARLY IN DAY: 1. In 1-quart saucepan, evenly sprinkle unflavored gelatin over ¾ cup cold water, let stand 1 minute to soften gelatin slightly. Cook over medium heat, stirring frequently, until gelatin completely dissolves.
2. In food processor with knife blade attached, or in blender at high speed, blend cottage cheese until very smooth, about 2 minutes. Spoon cream cheese, yogurt, frozen lemonade concentrate, and gelatin mixture into food processor or blender and continue blending until well mixed.
3. Pour mixture into 8-cup ring mold; cover and refrigerate until set, at least 3 hours.
4. To serve, peel and cut kiwifruit into wedges. Cut papaya into wedges. Cut honeydew melon into chunks. Slice star fruit. Carefully unmold gelatin onto lg chilled platter. Serve with fruit. Garnish with fresh mint sprigs.
