Fruited honey chicken

1 3-Lb Chicken, cut up for frying
Salt And Pepper
¾ cup Apple Cider Or Juice
½ cup Orange Juice
¼ cup Lemon Juice
1 Onion -- chopped
½ cup Vegetable Oil
1 Fresh Apple, Unpeeled, sliced OR a handful of dried apples
Handful Of Seedless Raisins
Handful Of Dried Apricots
Handful Of Pitted Prunes
2 tablespoons Honey

Directions

Salt and pepper the chicken pieces, then marinate chicken in fruit juices and onion for 1 hour or so (reserve marinade). Preheat oven to 350 F. Brown both sides of all chicken pieces in oil. Place chicken in a covered casserole and cover with marinating juices plus the remaining ingredients. Bake for 45 mins, basting occasionally with marinade and pan juices.

Yield: 4 to 5 servings.
